Eating With Purpose In Providence

grab n go portion of restaurantProvidence has a new vegan restaurant and it’s already one of my favorite places in town. byChloe is a well-known and universally-liked chain of vegan restaurants. They have locations in New York, Boston, Los Angeles, and even London. Providence is one of their newest locations, though I’m sure there are more to come in other major foodie cities across the globe. Their motto is to “Eat Well. Eat With Purpose.” I love that so much! Even though I’m guilty of occasionally eating with no purpose whatsoever, I am always happy to support a restaurant that encourages people to be conscious eaters.

I haven’t tried everything on their menu, but I’m well on my way. The first time I went to byChloe was to grab lunch with a co-worker. It was very busy for their Opening Week, but we managed to find a nice two-top and hop in line to order. They have customers order at the counter and pick up the food when it’s ready. They also have a super convenient online/app order system that notifies you via text message when your order is ready for pick-up. What a great concept, particularly in a college town with a whole bunch of busy students and faculty.

by chloe burger and mac n cheeseMy co-worker and I decided on each getting a guac burger and sharing a side order of the mac n’ cheese. I am serious when I say: this was/is the best vegan burger I’ve ever had. byChloe’s Guac Burger is made with a black bean-quinoa-sweet potato patty, corn salsa, onion, guacamole, tortilla strips, chipotle aioli, and either a whole grain or gluten free bun. It is poetically delicious. The mac n’ cheese is also great, though I’ll include a disclaimer: it does not taste like mac-and-actual-cheese. It’s a really nice taste, don’t get me wrong. The “cheesy” sauce is more like a cream sauce (made from sweet potato and cashews) that perfectly coats the big shell pasta. They top the mac n’ cheese with paprika, “bacon” made from seasoned, crispy shitake mushrooms, and “parmesan cheese” made from almonds. It’s a top notch appetizer (or Hell… a full meal if you order the larger size… or two).

eat by chloeI’ve stopped in a couple more times since my first lunch and I’ve found that the restaurant is a lot more calm between 3pm and 6pm. Over a few visits, I tried the air baked french fries, kale artichoke dip, and a seasonal clementine lemonade–all of which were good. I highly recommend the kale artichoke dip! byChloe is a pleasant place to go after work to hang out. Not only is the food absolutely delicious, but the staff are incredibly friendly and the decor is totally zen.

Since I haven’t made it even halfway through the menu, I have a byChloe wish list for my upcoming visits: all of the salads (particularly the Spicy Thai), Avocado Pesto Pasta, Mom’s Cinnamon Roll, Pesto Meatballs. I’ll keep everyone updated on my ranking, but it goes without saying that the Guac Burger will forever be my favorite menu item.
